RECIPE: Split Pea Omelet

Not a big fan of eggs? Want to start eating a more healthy meal for breakfast? Try this split pea omelet recipe!

Split peas definitely aren't the food of choice for many people. But, trust me this recipe is delicious. For those of you that do not like eggs like me, split pea omelets are the way to go. It is also extremely healthy because split pea flour is high in dietary fiber and low in calories. In addition, this dish can easily be made within 10 minutes.

Ingredients (makes about 5-6 omlets)

  • 1 cup of split pea flour
  • 1 medium sized tomato (chopped)
  • 1 medium sized onion (chopped)
  • 2 tbsp cilantro (chopped)
  • 1/2 cup of water
  • 1/2 tsp tumeric powder
  • 1/2 tsp cumin powder
  • 1/2 tsp chili powder
  • 1/2 tsp baking powder
  • salt to taste
  • 2 green chilis (optional)

Place the split pea flour in a large bowl. Add the chopped onion, tomato, cilantro, spices, and baking powder to it. Next, add the water to the dry mixture and stir together. On a large frying pan, add oil and keep the heat on low. Pour about 1/4 cup of batter on to the pan. Fry the omelet on both sides until slightly browned. Serve hot with ketchup.
