RECIPE: Avocado Cupcakes

Step out of your baking comfort zone and try this new recipe!

As you might already know, avocado is an amazing fruit that is low in saturated fat and has over 20 essential nutrients. Avocados have also been linked to cancer prevention. It is for these reasons that I have begun to incorporate this fruit into my daily diet. I have eaten dishes with avocados in  sandwiches, salads, and even omletes but never in any desserts. I began to wonder if it was possible to bake and enjoy avocado sweets.

This cupcake recipe is healthy and moist without even an ounce of butter in it. The sour cream and avocados combined give the batter a thick consistency. This thickness makes the cupcakes moist, light, and extremely tasty. The lime glaze is also a nice pairing because it brings a sweet and tangy flavor. You can also use this batter to make cake loafs or even a bundt cake.

Ingredients

(for cupcakes)

  • 2 Avocados (peeled and mashed)
  • 2.5 cups white sugar 
  • 5 eggs
  • 1.5 tsp vanila extract
  • 2 tbsp fresh lime juice
  • 0.5 cups of sour cream
  • 3 cups all purpose flour
  • 1 tsp baking powder
  • zest of 1 lime (reserve a tsp for the glaze)
  • 1 cup unsweetened coconut flakes

  • 1 cup confectioners sugar
  • 3 tbsp fresh lime juice
  • reserved lime zest

Directions:

(for cupcakes)

Preheat your oven to 350º and spray your cupcake pans thoroughly with baking spray. Sift together the flour and baking powder and set aside. In a large bowl or stand alone mixer, cream together the avocado and sugar until thoroughly mixed. Beat in the eggs one at a time, then stir in the vanilla, lime juice, sour cream, lime zest and coconut flakes. Beat in the flour mixture, mixing until just incorporated. Pour batter into prepared pans and bake for 25 minutes or until toothpick inserted in the center comes out clean. Cool 10 minutes then invert onto plate.

(for glaze)

In a small bowl, combine the above ingredients and drizzle over the warm cake.
