1 tablespoon heavy cream -- or half and half for a lighter macaroon

1 1/2 teaspoons vanilla

12 oz. bittersweet chocolate; melted

Preperation:

Line baking sheet with parchment paper. In large bowl mix all ingredients with the exception of the bittersweet chocolate together until throughly combined. Press batter into an ice cream scoop or spoon and release onto baking sheet. Bake for 20 minutes at 325 degrees. Remove from oven and let cool. Melt chocolate on stove top or microwave; your choice. Dip one side of each macaroon in melted chocolate, place on wax paper lined tray. Refrigerate for 20 minutes, serve and enjoy!
