RECIPE: Vanilla Chocolate Chunk Cake

Cake:

1 stick unsalted butter melted

1 1/2 cups sugar

2 eggs

3 cups sifted all purpose flour

1/2 tsp of baking soda

1 1/2 tsp of baking powder 

1 tsp course salt

1 package of instant vanilla pudding mix

2 tsp vanilla extract

1 ½ cups semi-sweet chocolate chunks

1 ½ cups milk or 3/4 cup canola oil (your choice)

Directions:

Pre-heat your oven to 350 degrees. In medium bowl mix sifted flour, baking soda and baking powder and salt with a whisk.  Set aside.  In large bowl crack two eggs and add sugar, vanilla and instant pudding mix.  Mix by hand or with automatic hand mixer.  Once egg mixture is smooth with no lumps add the flour mixture and milk mixture alternating between the two in four separate batches, making sure that the cake batter is fully mixed in between adding batches.  Once the batter is thick and smooth, fold in the chocolate chunks.  Spray two 8 inch round baking pans with cooking spray and cover the bottom of the pans with parchment paper and spray parchment paper as well.  Pour equal amounts of the batter into each pan and bake on 350 degrees for 30-45 minutes or until cake is golden in color and a toothpick comes out clean from the center of the cake.  Next prepare the vanilla buttercream frosting.

Vanilla Buttercream Frosting:

3 cups confectioners' sugar

1 cup butter

1 teaspoon vanilla extract

1 to 2 tablespoons half and half

Directions:

In a standing mixer fitted with a whisk, mix together powdered sugar and butter. Mix on low speed until well blended and then increase speed to medium and beat for another 3 minutes.

Add vanilla and cream and continue to beat on medium speed for 1 minute more, adding more cream if needed for spreading consistency.
